Ingredients

Scale

Brownie Base:

  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 teaspoon salt

Peanut Butter Filling:

  • 1/2 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 1 tablespoon unsalted butter, softened

Chocolate Drizzle:

  • 1/2 cup chocolate chips or chopped chocolate (semisweet or milk)
  • 1 teaspoon butter or shortening (optional, for smoothness)

Instructions

  1. Preheat the Oven: Preheat oven to 350°F (175°C). Grease a mini muffin tin or line with paper liners.
  2. Make the Brownie Batter:
    • In a medium saucepan, melt the butter over low heat. Remove from heat and add granulated sugar and brown sugar, stirring until combined.
    • Add eggs one at a time, stirring well after each addition, then mix in the vanilla extract.
    • Sift in the flour, cocoa powder, and salt. Fold gently until the batter is smooth.
  3. Fill the Muffin Tin:
    • Spoon brownie batter into each mini muffin cup, filling them halfway.
  4. Prepare the Peanut Butter Filling:
    • In a small bowl, mix peanut butter, powdered sugar, and softened butter until smooth. Roll small portions into balls and flatten slightly to form a disk.
    • Place one peanut butter disk on top of the batter in each muffin cup.
  5. Bake:
    • Bake for 12-15 minutes, or until the brownies are set but still slightly soft in the center. Be careful not to overbake.
  6. Prepare the Chocolate Drizzle:
    • Melt chocolate chips and butter or shortening in a microwave-safe bowl in short intervals, stirring between each. Drizzle over each brownie bite.
  7. Cool and Serve:
    • Let cool completely in the tin before removing. Enjoy immediately or store in an airtight container.

Notes

  • Choosing Peanut Butter: For the best texture, use a no-stir, creamy peanut butter. Natural peanut butters may be too oily.
  • Storage: Store at room temperature for up to 4 days, or freeze for up to 3 months.
  • Gluten-Free Option: Substitute all-purpose flour with a gluten-free flour blend for a gluten-free version.
  • Vegan Option: Use plant-based butter, a flax egg (1 tbsp ground flaxseed + 3 tbsp water), and vegan chocolate to make this recipe vegan-friendly.
