Ingredients

Scale

Peanut Butter Dough

  • 1/2 cup creamy peanut butter (not natural peanut butter)
  • 1/4 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Brownie Dough

  • 1/4 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/3 cup cocoa powder
  • 1 large egg
  • 1 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup chocolate chips

Instructions

  • Prepare the Peanut Butter Dough
    • In a large bowl, cream together the softened butter, peanut butter, brown sugar, and granulated sugar until smooth and fluffy.
    • Add the egg and vanilla extract, mixing until fully incorporated.
    • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, stirring just until combined. Avoid overmixing. Set aside.
  • Prepare the Brownie Dough
    • In a mixing bowl, combine the melted butter, sugar, and cocoa powder, stirring until smooth.
    • Add the egg and vanilla extract, mixing until fully combined.
    • In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the cocoa mixture, stirring just until incorporated. Fold in the chocolate chips.
  • Chill the Doughs
    • Cover both doughs and refrigerate for 30 minutes to make them easier to handle.
  • Combine and Swirl the Doughs
    • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
    • Take a scoop (about 1 tablespoon) from each dough and press them gently together. Roll the combined dough into a ball without overmixing to keep the swirled effect.
    • Place each dough ball on the prepared baking sheet, spacing them about 2 inches apart.
  • Bake
    • Bake for 10-12 minutes, until the edges are set but the centers are still soft. The cookies will firm up as they cool.
    • Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Storage: Store cookies in an airtight container at room temperature for up to 4-5 days, or refrigerate for up to a week.
  • Freezing: You can freeze the dough balls for later. When ready to bake, place frozen dough on a baking sheet and bake, adding 1-2 minutes to the bake time.
  • Natural Peanut Butter: Avoid natural peanut butter, as its oil can affect the texture and swirl effect of the cookies.
  • Add-ins: Customize with additional mix-ins like chopped nuts, caramel bits, or white chocolate chips for extra flavor and texture.
