Instructions

For the Cupcakes:

  1. Preheat your oven to 350°F (175°C). Line two muffin tins with cupcake liners (makes 16–18 cupcakes).
  2. In a large bowl, mix the vegetable oil, brown sugar, eggs, and vanilla extract until smooth.
  3. Add the peanut butter and beat until well combined and free of lumps.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. In a measuring cup, combine the milk and sour cream.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the milk and sour cream, beginning and ending with the dry ingredients. Mix gently to avoid overmixing.
  7. Spoon the batter into the cupcake liners, filling each about ⅔ to ¾ full.
  8. Bake for 20–24 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow the cupcakes to cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.

For the Frosting:

  1. Beat the softened butter in a large mixing bowl until fluffy (2–3 minutes).
  2. Add the peanut butter and mix until smooth.
  3. Gradually add the powdered sugar, ½ cup at a time, alternating with the cream or milk. Mix until the frosting is smooth and reaches your desired consistency.
  4. Stir in the vanilla extract.
  5. Spread or pipe the frosting onto the cooled cupcakes. Decorate with peanut butter candies or other toppings if desired.
