- 1 tbsp low-sodium soy sauce
- 1 tbsp fish sauce (optional for vegetarians)
- 1 tsp toasted sesame oil
- 3 tbsp Thai red curry paste
- 1 tsp brown sugar
- 2 tbsp lime juice
- Chopped chives, for garnish
- Optional veggies (e.g., spinach, mushrooms, carrots, bok choy)
Instructions
- Prep the Ingredients:
- Bring a large pot of salted water to a boil for the gyozas. Grate the garlic and ginger.
- Cook Aromatics:
- Heat vegetable oil in a large pot over medium heat. Add garlic and ginger, sautéing for about 30 seconds until fragrant.
- Make the Broth:
- Add chicken broth and coconut milk to the pot. Stir in soy sauce, fish sauce, sesame oil, curry paste, brown sugar, and lime juice. Bring to a boil, then reduce heat and simmer for 5 minutes.
- Cook the Gyozas:
- Add the gyozas to the boiling water and cook according to package instructions (2–3 minutes). Drain and set aside.
- Assemble the Soup:
- Divide cooked gyozas between bowls. Ladle the hot coconut curry broth over the top. Add optional veggies if desired.
- Garnish and Serve:
- Top with chopped chives and any additional toppings like cilantro, red chilies, or crushed peanuts. Serve immediately.
Notes
- Vegetarian Option: Use vegetable broth and skip the fish sauce. Substitute gyozas with vegetarian dumplings.
- Storage: Store broth and gyozas separately to avoid sogginess. The broth keeps in the fridge for up to 3 days or in the freezer for up to 2 months.
- Customize: Adjust the spice level by adding more or less curry paste. Add fresh vegetables for extra flavor and texture.
